To start this easy vegetable soup, chop your vegetables. This is the key to a simple dinner recipe. You'll need 1 cup of chopped onion, 1/2 cup of fennel, 3 cloves of garlic, minced, 4 cups of fresh asparagus, 2 1/2 cups of zucchini, 1 cup Roma tomatoes, and 2 tablespoons of fresh basil. Add 2 tablespoons of olive oil to a 4-quart Dutch oven, adding the onion, fennel, and garlic once the oil is hot. Caramelize this mixture, stirring in three 14 1/2 ounce cans of vegetable or chicken broth and bringing the soup base to a boil. Simmer (covered) on low for 5 minutes, stirring in the asparagus, zucchini, and tomatoes. Boil and reduce again, simmering the vegetable soup until the zucchini is tender. Season the homemade vegetable soup with some salt, black pepper, and chopped basil. This easy dinner recipe can also work for a quick lunch, and it's a great way to get kids to eat their vegetables!
