Watch as Better Homes and Gardens shows you how to make orecchiette pasta with bacon meatballs that will satisfy any bacon lover's taste buds! Start out this pasta recipe by combining 12 ounces of ground pork, four slices of chopped bacon, two cloves of chopped garlic, and a quarter teaspoon of black pepper. Mix well and form one-inch diameter balls. Add the bacon meatballs to a few tablespoons of oil in a skillet over medium heat. Cook for eight to ten minutes, turning consistently to get the bacon crispy. Transfer the meatballs to a paper towel lined plate and drain off any excess grease. Be sure to save a tablespoon of the bacon drippings to use for even more bacon flavor in the final orecchiette pasta dish. Cook eight ounces of orecchiette pasta and drain it, again saving one cup of the boiling water for flavor later on in this dinner recipe. Add to the bacon skillet a couple of thinly sliced shallots on medium high. Cook these for three to four minutes and when tender, add the meatballs back to the skillet. Chop three tomatoes and cook them for three to four minutes. Add four cups of kale, the orecchiette pasta, the reserved pasta water, and a pinch of salt and pepper to the skillet. Toss this delicious easy pasta recipe and top off with some shaved parmesan for a great dinner idea any night of the week.
