Polenta is easy to make with these three basic ingredients. Begin by boiling lightly salted water or broth in a saucepan. Slowly pour corn meal into the boiling water in a steady stream, stirring constantly. Add one cup of cornmeal to four cups of water. Once the corn meal starts to plop, turn the heat to low and let it continue cooking uncovered for 10 minutes or until thick, stirring occasionally. When cornmeal reaches the perfect thickness, it's ready to serve. Serve polenta warm with some basil and parmesan. Or chill polenta until firm so it can be sliced and fried to add to recipes.
