5 large (or 6 small-medium) Granny Smith Apples, peeled, cored, each cut into 8 wedges
1 Vanilla Bean, split lengthways, seeds scraped, bean reserved
1/3 cup Caster Sugar
1 tsp Lemon Juice
Crumble
3/4 cup Flaked Almonds
3/4 cup Plain Flour
1/2 cup Caster Sugar
1/2 cup Rolled Oats
1/2 tsp Ground Cinnamon
1 pinch Salt
100 g Chilled Unsalted Butter, cut into small pieces
Vanilla Ice-cream or Whipped Cream, to serve
Method
1. For the Apples: Preheat oven to 180°C or 160°C fan.
2. Mix apples, vanilla seeds, reserved bean and sugar together in a 2-litre, square baking dish. Set aside.
3. For the Crumble Topping: Mix almonds, flour, sugar, oats, cinnamon and salt in a medium bowl.
4. Rub butter into flour mixture until combined and mixture is quite clumpy. Sprinkle mixture evenly over apples. Squeeze over lemon juice.
5. Bake for 50-55 mins, or until apples are tender, juices bubble and crumble is golden brown. Stand for 10 mins to cool slightly before serving.
6. Spoon crumble into bowls and serve with ice-cream or whipped cream.
