Add a small sweet onion, cut into wedges, a chopped yellow sweet pepper, and 1/2 cup of rinsed and drained lentils. Cook this rich mixture and stir for two minutes. Stir in two teaspoons of grated fresh ginger, a teaspoon of curry powder, a teaspoon of cumin, a 26-ounce box of chicken stock, and a 15-ounce can of pumpkin puree. Add in 3/4 cup of water before bringing it all to a boil. Reduce the heat to medium low, and let it simmer for 25 minutes. The lentils should be tender. Season to taste with salt and pepper, and serve it with a little grated fresh nutmeg on top. This pumpkin soup recipe is ready to go!
