Start this easy pasta salad recipe by roasting two poblano peppers. Cut the peppers in half, placing the cut side down on a baking sheet lined in tin foil. Roast them in a 450 degree oven for 20 minutes. While the peppers are becoming smokier in flavor, turn your attention to the pasta recipe portion. Add eight ounces of large elbow macaroni to boiling water, letting cook until al dente. After the macaroni is finished, drain it using a colander and run cool water over it. Don't forget about those poblano peppers! If they look blistered and have a nice char, take them out of the oven. Wrap the foil around the peppers and let steam for 15 minutes so the skin loosens up. This spicy additon will take your pasta salad to the next level of Southwestern flavor. After the poblanos have cooled, remove the skins and seeds and chop them finely. The pasta salad dressing recipe couldn't get any simpler. Combine four ounces of softened cream cheese and one cup of salsa in a large bowl and beat until smooth. That's it! To wrap up this chicken pasta salad, add the cooled macaroni and poblano peppers to the dressing, as well as five cups of chopped, cooked, crispy chicken strips and a chopped avocado.
