Before starting this banana cake recipe, grease and flour a 13x9 inch pan, or if you'd like to make a layered cake, eight or nine inch round pans work just as well. Preheat the oven to 350 degrees before beginning to combine the ingredients. In a large bowl, add 2-1/4 cups of flour, 1-1/2 cups of sugar, 1-1/2 teaspoons of baking powder, one teaspoon of baking soda, and 1/2 teaspoon of salt. Stir these dry ingredients well before adding the wet ingredients to make this easy banana cake nice and soft. What's banana cake without lots of ripe bananas? Add one cup of mashed ripe bananas to the mixture, or about three whole bananas mashed. Pour in 3/4 cup of buttermilk, 1/2 cup of shortening, and one teaspoon of vanilla before beating everything together on low speed. After two minutes, add two eggs to the mixture and beat once more on medium speed. Pour the batter into the pre-prepared pan and place into the heated oven. Let the banana dessert bake for around 35 minutes, or until a toothpick inserted into the cake comes out clean.
