A vibrant vegetarian casserole you'll be excited to dive into.

There is no better feeling than rocking up to work with leftovers set to make your colleagues drool with jealousy. And this magical feeling could last all week when you cook these seven healthy dinner recipes that keep overnight and travel easily to work the next day.

MONDAY

Vegetarian dishes are perfect for doubling in order to ensure leftovers. Firstly, you don’t have to worry about whether or not you can reheat that chicken or whether your seafood went bad during your morning commute. And secondly, vegetables themselves are such a great way to boost the nutrients in your lunch, as well as the volume of your dish. Meaning, no matter who has seconds there will be leftovers for tomorrow. This Lebanese roast cauliflower and sweet potato casserole is so flavoursome and easy to make your colleagues will be drooling from the smell alone. Just pack the yoghurt dressing and lemon wedges separately so you don’t accidentally microwave them too.

TUESDAY

There is a reason grains feature in so many meal prep recipes, they just keep so well. They also bulk up any dish and are a great source of fibre. This barley and pumpkin salad with a coconut dressing is so easy to whip up mid-week and makes for a great lunch for the next day. Full of walnuts, chia seeds and flaxseeds this salad is fibre and calcium rich and is a great recipe to keep in regular rotation.

WEDNESDAY

Rice paper rolls are so quick and easy to make once you have your ingredients chopped and ready to go. A perfect dish to get creative with, you can make vegetarian rolls, prawn, chicken, or whatever you have on hand. And the kids are going to love helping out. Rice paper rolls travel well for work as long as you have a fridge or a cooler bag to keep them in. Roll extras the night before or quickly whip them up in the morning with the extra ingredients. And just a little tip from yours truly, try separating the rice paper rolls in your lunch box with a little square of baking paper, that way you’ll spend less time trying to pull them apart and more time enjoying your home-made lunch.

Lasagna for spring? Groundbreaking? Firstly, if you missed that Devil Wears Prada reference, shame on you. Second, I know it’s not spring but this lasagna is groundbreaking. This ‘spring lasagna’ is a lighter version of a family favourite, replacing the stodgy bechamel sauce with fresh ingredients and of course the same amount of cheese. If you can’t find green lasagna sheets (I also recommend lentil lasagna sheets, yum!) then I dare you to make your own. I know you’re probably scoffing at the idea at packing this for work tomorrow, but this dish does keep surprisingly well, and because there is no meat in the recipe there is no reheating ‘don’ts’ you have to worry about.

FRIDAY

You may be the queen of kale, but deep down everyone loves a schnitzel and to be more specific, everyone loves a schnitzel burger. Cook this quinoa and thyme chicken schnitzel with honey pumpkin on Friday night, and come Saturday lunch, we’re having schnitzel burgers! Add extra veggies, a dry slaw and sandwich it all together with a sourdough bun and you’re onto a winner.

SATURDAY

The cool weather has started rolling through Sydney this week, and personally I could not be happier. Yes, too much of my life revolves around food, but soup season is here and it’s about to make your meal prepping so much easier. This hearty ham hock and bean stew is the perfect dish to start slow cooking on Sunday afternoon and enjoy that night, the next day and the day after that, if you’re lucky. Full of hearty, rich flavours and a heap of autumn vegetables this one is sure to be a regular in your crock-pot.
