A man is recovering in hospital after being stabbed in Noble Park. (9NEWS)

A 24-year-old man is in intensive care in a Melbourne hospital after a fight broke out at a surprise birthday party in Noble Park, in Melbourne’s south east last night.

The Berwick man was allegedly stabbed during an altercation with two men on a Noble Park street around 5am, after a fight broke out inside a venue and spilled out onto the street.

"Everyone was having a great time, there weren't drinks involved," witness Steve Tutt told 9NEWS.

Rattled Noble Park shop owners say they have previously raised concerns with police over parties being held in the location, with some traders forced to close early last night in fear that trouble could escalate.

"I don't feel safe when there's always parties here. I've been running my business here for a long time, when there's a party, I feel not safe," one shop owner told 9NEWS.

The victim was taken to Dandenong Hospital with life-threatening stab wounds to his stomach.  

He has since had surgery and remains in a stable condition.

Detectives are reviewing CCTV footage as they hunt the attacker.
